Process

Prepare

Eggplant, in any quantity

Cut into 1.2″ slices.

Cut each slice into pieces to form cubes / rectangles.

Rinse in colander.

Pat dry.

Toss with olive oil and pepper to taste.

Cook

Spread out on tray and bake at 450°F for 20 minutes.

Flip and roast for another 10 minutes, until the eggplant is super soft and caramelized on the edges.
