Now, I’m not saying that chili-cheese fries (or burgers or hot dogs) are “healthy.” But they are fun. Sometimes we need to indulge in a little sinfulness. And this recipe will make it “healthier.” It is gluten-free, and has options to lower the FODMAP risks.
Process
Prepare Carrot
1 Carrot, raw, food processed
Brown
1 LB Ground Beef (80/20% fat content)
Prepared Carrot
Add
13-14.4 Oz Beef Stock
1 Tbsp Masa Flour
2 Tbsp Chili Powder
1/2 Tsp Black Pepper
1/2 Tsp Onion Powder*
[Because Onion Powder is a High FODMAP food, consider using 1/3 Tsp Ground Asafetida here.]*
1/2 Tsp Garlic Powder*
[Because Garlic Powder is a High FODMAP food, consider using 1/2 Tbsp Garlic Oil here.]*
1/2 Tsp Paprika
1/8 Tsp Cayenne
Add
1 Tbsp White Vinegar
4 Tbsp GF All-Purpose Flour
Simmer and stir on an extremely low heat for about 20 minutes.
Allow to set and thicken for an hour or two, if possible. Add more flour slowly to thicken as needed.
